Happy Valentine’s SunDay!

I hope you are spending this beautiful, chilly day in the warmth of the ones you love the most, I know I am 🙂

I’ve been single for the last 5.5 years and Valentine’s day is still one of my most favourite days!

I love all of the love going around, I wish it were Valentine’s Day everyday in the world <3

So anyhow,
I made these love & peanut butter filled crispy rice treats last week and aside from the heart shaped ones I gave away, I have already ate the entire tray. 🙂

Yeah they are that good!

This recipe comes from Alicia Silverstone’s book the Kind Diet.
It’s a great healthy alternative to the original rice krispy square.

Ingredients

1 box rice crisps cereal
1 3/4 cups brown rice syrup
Sea salt
3/4 cup organic peanut butter or almond butter
1/2 cup non-dairy chocolate or carob chips
Directions:
Pour the rice cereal into a large bowl.
Heat the syrup with a pinch of salt in a saucepan over low heat.
When the rice syrup liquefies, add the peanut butter and stir until well combined.
Pour over the rice cereal. Mix well with a wooden spoon.
Once thoroughly mixed and cooled to room temperature, stir in the chocolate chips.
Make sure the mixture is cool, or you will end up with melted chocolate instead of chocolate chips in your treats.
Turn the mixture out into an 8″x8″ or 9″x13″ baking dish.
Wet your wooden spoon lightly and press the mixture evenly into the baking dish.
Let cool for 1 hour before cutting into squares or bars.

I used cookie cutters to make some of mine into hearts because heart shaped foods just taste better!
