I am a pretty plain & simple Vegan/Nutritionist. I like to have the basics on my plate & that’s all that really matters to me. So every once in awhile when I get creative and make something that looks and tastes delicious, I figure I should share.

I pre-made this meal all within about an hour to pack up and take with me for dinner that night. It was still simple and easy and so so good, I wish I had leftovers.

This recipe is adapted from my favourite Vegan Recipe site Oh She Glows. I added mushroom to make it heartier, and subbed out tortillas for lettuce for a gluten friendly version.
